Cost and form
Bulk lowers unit cost, and choosing the right form sharpens it further. Kernels — halves, quarters, and pieces — suit most manufacturing and packing; in-shell suits snacking, retail, and longer storage. Pay for whole halves only where they show; use quarters and pieces in batter, fillings, and bakery where shape does not matter.
Colour grade is a cost lever
Walnut quality is spoken partly in colour: lighter kernels carry a premium and present beautifully on top of a cake or in a snack pack, while darker amber grades are more economical for inclusions. Specifying colour up front controls both appearance and cost — a detail many buyers leave to chance and overpay for.
