Because they are expensive and perishable, specification matters more here. Pin the origin (Mediterranean Pinus pinea vs more economical Asian grades), count/size, and colour, and agree vacuum packing. Storage is part of the deal

Pine nuts' high oil content makes them more perishable than other nuts. Store cool and dry, ideally vacuum-packed or chilled, and rotate first-in-first-out. We supply in 5 / 10 kg vacuum cartons to protect freshness from our warehouse to your line, with a Certificate of Analysis per lot.
